Preheat Pellet Grill: to 450 degrees Fahrenheit or "High" setting.
Season Chicken Thighs: Drizzle each thigh with a little bit of Extra Virgin Olive Oil, then liberally apply dry rub to each thigh.
Grill Chicken Thighs: Place chicken thighs on the hot grill, skin side DOWN. When internal temperature of each thigh reaches 155 degrees F glaze both sides of the chicken and then place back onto the grill, skin side UP. Continue to cook until the internal temperature of the chicken thigh reads between 170 and 180 degrees F.
Remove from heat and glaze the chicken thighs again and let sit for 10 minutes, then serve.
Notes
Not all pellet grills highest temperature is 450 degrees. Some, like the MAK 2-Star get to over 600 degrees. So if your pellet grill reaches temperatures over 450 - we recommend you still target the cook temp to be 450 degrees for this recipe.Chicken thighs are technically fully cooked and safe to eat at 160 degrees Fahrenheit. But we find that the fat renders better and the skin crisps up some if you continue grilling until the internal temperature is 170 - 180 degrees F, using a good instant read thermometer like the Thermoworks Thermapen One.
