Easy Grilled Prosciutto Wrapped Green Bean Bundles
Blanched green beans seasoned with salt and pepper and wrapped with savory prosciutto. Then grilled over direct heat for an amazing grilled green bean and prosciutto appetizer.
Prep: Prepare the grill for direct grilling targeting 450 degrees Fahrenheit in the cooking chamber. The preferred fuel is lump charcoal for the most flavor.
Blanch Beans: While the grill is warming, boil water in a large sauce pan. Add the green beans and boil for 2 minutes. After 2 minutes, remove beans and place immediately the ice water bath for 1 minute. Remove and dry beans using a paper towel see notes).
Season and Wrap: In a large bowl toss the green beans with olive oil, salt, and pepper. Then put them on a sheet tray in bundles of 4 or 5 green beans of similar size. Slowly wrap each bundle with one piece of the prosciutto as tightly as you can.
Grill and Serve: Place the prosciutto bundles on the grill over direct heat on the grill grates. Close the lid and grill for 2 - 3 minutes. Flip the bundles and continue grilling for 2 additional minutes. Continue to flip and rotate and grill over direct heat until the prosciutto has crisped up and the ends of the green beans have some grill marks. Adjust the position of the green bean bundles if any hot spots. Remove after 10 minutes. Place on your serving platter and dust with the Parmesan cheese and optional lemon olive oil drizzle.
Notes
Grilling:
If using a gas grill follow the same directions. We recommend firing up two burners.
If you have hot spots be sure to rotate the beans around for even cooking.
If you leave your lid open for extended period of time over charcoal then the charcoal will get very hot. Adjust your cooking time if you are cooking a lot of these as your charcoal heats up.
