Preparation: Prepare grill for direct grilling, targeting 500 degrees Fahrenheit in the cooking chamber. Cut the rack of lamb into individual lamb chops, coat in olive oil and season liberally.
Grill: Place seasoned lamb chops on the hot grill grate over direct heat. Sear one side for up to 4 minutes, or until you see grill marks. Then flip and cook up to an additional 4 minutes. Check temperature with an instant read thermometer and remove them when the internal temperature is 135 degrees F for medium rare.
