Grilled Chipotle Shrimp Skewers Recipe
Easy grilled shrimp marinated in a spicy and sweet chipotle honey lime marinade and quickly grilled to perfection. Great appetizer for summer grilling season or filling for tacos.

- 2 pounds peeled and deveined shrimp We use 26-32 count shrimp.
- 3 tablespoons seafood seasoning
Chipotle Honey Lime Marinade
- ⅓ cup chipotle in adobo sauce We use sauce and diced peppers in sauce.
- 2 cloves garlic
- 2 tablespoons diced shallots
- 2 tablespoons fresh squeezed orange juice
- ½ lime juiced About 2 tablespoons
- 2 tablespoons extra virgin olive oil
- 1 tablespoon honey
- 1 teaspoon kosher salt
Marinade
Place all marinade ingredients in a large bowl and mix to incorporate. Alternative you can combine in a food processor and pour into a gallon baggie.
Add the shrimp to the marinade. Cover with plastic wrap and then marinate for one hour in the refrigerator.
Prepare grill for direct heat cooking targeting 450 to 500 degrees Fahrenheit in the grill. While the grill is warming up is a good time to skewer the shrimp.
Grill chipotle shrimp over direct heat for just two minutes per side. That’s it. You can use a good instant read thermometer. If you use a thermometer remove the shrimp when the internal temperature reads 135 degrees Fahrenheit.
Shrimp does not take long to grill, they are fast and easy so don’t walk away from the grill. Remove them from skewers and serve immediately.
Special equipment: metal skewers or wood (if using wood, make sure to soak them for at least 20 minutes prior to cooking)
Want More Flavor? Add some of your favorite dry rub or simply sprinkle salt and pepper over the pre-cooked skewered shrimp for extra flavor.
*The USDA recommends all shrimp be cooked to an internal temperature of 145 degrees Fahrenheit. We recommend 135 because as you pull it off the grill they will continue cooking to about 140 degrees and we trust where we source our shrimp from. Follow the recommended internal temperature based on your comfort level with your sourced shrimp and dietary needs.
