Spatchcocking  or flattening poultry helps it to cook quicker and more evenly, giving you juicier meat.

Remove the Backbone:  Using a sharp boning knife or culinary scissors cut on either side of the backbone.

Flatten: Place the bird, breast side down, and press down on each side to flatten. Flip the bird and press again

You are now ready to season and grill or smoke the bird.
